Cream of pumpkin soup is a smooth and velvety soup made with pureed pumpkin, cream, and a blend of aromatic spices. The soup starts by sautéing onions and garlic in butter or oil until they are soft and fragrant. Then, pumpkin puree, vegetable or chicken broth, and a combination of spices such as cinnamon, nutmeg, and ginger are added to the pot. The soup is simmered until the flavors meld together, and then it is pureed until smooth. Finally, cream or coconut milk is added to give the soup a rich and creamy texture. This soup is often garnished with a drizzle of cream, croutons, or fresh herbs.

  • 2 TBSP BUTTER
  • 2 LBS PUMPKIN, CUBED
  • 2 TBSP THYME LEAVES
  • 2 TBSP ESCALLION, MINCED
  • 6 CUPS WATER
  • 2 SACHETS MAGGI® CHICKEN NOODLE SOUP, 60G
  • 1 EA SCOTCH BONNET PEPPER (OPTIONAL)
  • 1 TETRA BOX CARNATION® FULL CREAM EVAPORATED MILK, 250ML

    Melt butter in a boiling pot, add pumpkin, thyme, escallion, stir continuously for 5 minutes over medium heat.

    Carefully add water and bring to a boil. Add the MAGGI® Chicken Noodle Soup Mix and scotch bonnet pepper. Boil for 20 minutes, stirring occasionally until the pumpkin is fully cooked. Remove from the heat and allow to cool slightly.

    Remove the scotch bonnet and carefully blend the boiled pumpkin with the liquid before returning to the stove. Bring to a boil over medium heat before finishing with the CARNATION® Full Cream Evaporated Milk and simmer for 5 minutes.
