CARAMELIZED BANANA ICE CREAM
Caramelized banana ice cream is a delightful frozen dessert that combines the sweet and creamy flavors of caramelized bananas with a smooth and velvety ice cream base. The recipe starts by caramelizing ripe bananas in a mixture of butter and brown sugar, which brings out their natural sweetness and creates a rich caramel flavor. The caramelized bananas are then pureed until smooth and combined with a custard base made from eggs, cream, milk, and sugar. The mixture is churned in an ice cream maker until it reaches a creamy consistency, and then frozen until firm. The result is a luscious and indulgent ice cream with a pronounced caramelized banana taste. It can be enjoyed on its own or paired with toppings such as crushed nuts, chocolate sauce, or a drizzle of caramel.
- 4 BANANAS
- 1 TBSP COCONUT OIL
- ½ CUP BROWN SUGAR
- 2 CUPS NATURE’S HEART® ALMOND MILK COFFEE
- 1 TSP VANILLA EXTRACT
- ¾ CUP MINI CHOCOLATE CHIPS OR TOASTED PECANS, OPTIONAL

1Peel and cut bananas lengthwise.

2Place bananas, cut side down, in hot pan with coconut oil and sear for 1 minute. Turn bananas over and sear the other side.

3Cook for another 5 minutes, stirring (bananas will start to fall apart).

4Add brown sugar and cook until sugar is dissolved, stirring constantly.

5Remove from heat and puree in a blender or food processor.

6Add Silk and vanilla, stirring to combine. Chill mixture for 1 hour.

7Process in ice cream machine according to directions.

8Add chocolate chips in during the last 5 minutes of processing.

9Serve immediately or store in freezer. If freezing, place in refrigerator for 10 minutes before serving to soften.
