Ingredients
  • 4 BANANAS
  • 1 TBSP COCONUT OIL
  • ½ CUP BROWN SUGAR
  • 2 CUPS NATURE’S HEART® ALMOND MILK COFFEE
  • 1 TSP VANILLA EXTRACT
  • ¾ CUP MINI CHOCOLATE CHIPS OR TOASTED PECANS, OPTIONAL

    Peel and cut bananas lengthwise.

    Place bananas, cut side down, in hot pan with coconut oil and sear for 1 minute. Turn bananas over and sear the other side.

    Cook for another 5 minutes, stirring (bananas will start to fall apart).

    Add brown sugar and cook until sugar is dissolved, stirring constantly.

    Remove from heat and puree in a blender or food processor.

    Add Silk and vanilla, stirring to combine. Chill mixture for 1 hour.

    Process in ice cream machine according to directions.

    Add chocolate chips in during the last 5 minutes of processing.

    Serve immediately or store in freezer. If freezing, place in refrigerator for 10 minutes before serving to soften.
